Gran Canarian pastry chef Yeray Reyes has unveiled a special selection of pastries to commemorate Canary Islands Day on May 30th. The initiative aims to connect the islands' identity and tradition through sweet offerings.
The main offering features cheesecakes inspired by Canarian flavors: one with Cubanito, combining white chocolate with the crunch of this traditional wafer biscuit; another with Bienmesabe, incorporating the classic almond and egg yolk cream; a Banana cheesecake with vanilla and caramelized banana; and a Gofio cheesecake, using the ingredient in both the base and cream.
The range is completed with two versions inspired by the popular Tirma ambrosias: one with Tirma white (white chocolate and Tirma crunch) and another with Tirma chocolate (milk chocolate and Tirma crunch).
In addition to the cheesecakes, the bakery has launched two varieties of palmier pastries with the same Tirma white and Tirma chocolate flavors, filled with the creams and crunches from the cheesecakes.
The Yeray Reyes establishments have been decorated with a style evoking the 'soul of Canarian identity' to immerse customers in the festive atmosphere. This offering responds to the growing demand for local and themed products.
