DSTAgE by Diego Guerrero Shines on Star Nights' Second Evening at Maspalomas Golf

The two-Michelin-starred Madrid restaurant offered a seasonal menu and a sensory experience in the south of Gran Canaria.

The restaurant DSTAgE, awarded two Michelin stars, celebrated its second evening at Maspalomas Golf Star Nights by Mahou & Lopesan, presenting a menu that fuses flavor, aesthetics, and ambiance.

The second night of the Maspalomas Golf Star Nights by Mahou & Lopesan cycle featured DSTAgE, the acclaimed Madrid restaurant by Diego Guerrero, holder of two Michelin stars. The event brought the chef's creative universe to the south of Gran Canaria, offering an experience designed to harmonize flavor, aesthetics, and ambiance.
The menu, meticulously crafted and served with great delicacy, invited diners to join the DSTAgE team on the journey that has established the restaurant as a project of unique personality. The carefully selected, seasonal, and balanced proposal integrated each element into its own gastronomic narrative.
The decor placed gastronomy at the heart of the experience, with tables adorned by a large loaf of bread with candles, evoking the concept of 'wood-fired bread'. This warm and evocative composition continued the visual language initiated during the first dinner with Ugo Chan, which featured a 'cauldron over fire'.
The ambiance, from the welcome cocktail to the dinner, paid attention to every detail, including the lighting and the unique setting of Maspalomas Golf, enhancing the scenic character of the proposal.
The opening cocktail included six creations: black garlic-yeast-vinegar; tuna-foiegrass; squid; French omelet; pandan mochi, and potato cheese, showcasing the creative play and technique of DSTAgE.
At the table, the experience continued with 'A Painting on the Wall', a narrative that brought the menu to life by evoking a painting displayed at the entrance of DSTAgE since its early days. The artwork, a gift of deep sentimental value from Diego Guerrero's mother, connected the gastronomic proposal with the restaurant's most intimate history. This was followed by four courses: shrimp salad, tomato water, sirloin, strawberries and cream, and marine puff pastry.
The DSTAgE team worked closely with the staff of Maspalomas Golf to translate the restaurant's identity to Gran Canaria, ensuring the execution of each dish and the rhythm of the service.
Diego Guerrero, born in Vitoria, defines himself as a divergent chef, aiming to free haute cuisine from traditional clichés. After earning two Michelin stars at El Club Allard, he left the restaurant in 2013 and opened DSTAgE Concept in Madrid a year later, a completely personal project where luxury lies in closeness and naturalness.
DSTAgE views gastronomy as a conscious act, grounded in creativity, sustainability, and profound respect for the product. Seasonality guides its menus, and resourcefulness and circularity permeate the kitchen and the experience, with each dish forming part of a changing, technical, and emotional narrative. In its industrial loft-style space, with an open kitchen and few tables, the everyday is elevated through reflection and innovation.
Four months after its opening, DSTAgE received its first Michelin star; the second came in the 2017 guide, and in 2025, it was awarded the Michelin Green Star for its commitment to sustainable practices. The restaurant also holds three Repsol Suns and three M's from the Guía Metrópoli. Guerrero has been part of The Best Chef Awards since 2021, reaching the highest category of three knives in 2024 and receiving The Best Science Award in 2025 for his innovation and application of science to gastronomy. Also named an ambassador for UN Gastronomic Tourism, he complements his creative universe with DHOUSE – The Chef's House and DSPOT, his creativity, R&D, and events studio.
Following the dinners by Ugo Chan and DSTAgE, Maspalomas Golf Star Nights will conclude its final event on August 21st with Gofio, the restaurant of Canarian chef Safe Cruz, recognized with one Michelin star. This final evening has already sold out all its tables, mirroring the success of the inaugural dinner, confirming the great reception of this first edition.
The project is driven by Maspalomas Golf in collaboration with Mahou and Lopesan Hotel Group, and supported by various institutions and companies such as Audiovisuales Canarias, IQOS, Guess, IOC Clínicas Dentales, Canaragua, Turismo de Gran Canaria, and Grupo Galarza.
