The island of Gran Canaria is preparing to honor its identity through gastronomy on the Day of Canarias, celebrated this May 30th. Several restaurants across the island will offer culinary experiences that reinterpret and celebrate traditional Canarian flavors.
In Las Palmas de Gran Canaria, Gambrinus offers a journey through fresh fish classics and Canarian cuisine, with dishes like 'papas arrugadas', octopus, 'gofio escaldado', marinated tuna, goat meat, and desserts such as 'huevos mole'. Meanwhile, La Catedral Bistró in Arucas, led by Kilian Nordelo, fuses contemporary Canarian cuisine with views of the basilica, highlighting its flan with 'bienmesabe' and Ron Arehucas Añejo.
In the historic neighborhood of Vegueta, Sorondongo, by Richard Díaz, pays homage to tradition with a special menu including bonito with smoked cheese, stewed squid, and 'frangollo'. Meanwhile, Berro Bistrot in Las Canteras presents a creative vegetarian proposal for the Day of Canarias, featuring dishes like 'escaldón de gofio', a tasting of Canarian cheeses, and 'mousse de gofio'.
In Las Coloradas, El Padrino focuses on the ritual of 'sancocho de cherne', a classic that becomes an unmissable event. For those venturing north to Gáldar, La Trastienda de Chago offers off-menu specialties such as black pork ribs and marinated red tuna tiradito.
Finally, AVE Pastelería Artesanal in Las Palmas de Gran Canaria concludes the experience with French-inspired desserts rooted in local ingredients, such as 'El Guanche' (crispy puff pastry, banana caramel, banana sponge cake, gofio mousse) and 'Bostock Canarian style' (brioche, 'bienmesabe', almond textures).
