The town of Corralejo, in the municipality of La Oliva, celebrates the Virgen del Carmen festivities with a traditional fish roast, organized by the fishermen's guild.

As is customary during the festivities of the patron saint of sailors, the fish roast will be one of the central events in Corralejo. The fishermen's guild has called for a special fishing haul for the occasion, the results of which were collectively prepared and cured in their own facilities.
This roast provides the finishing touch to the festive events, which began with maritime-themed activities, such as the theatrical performance 'Memorias de sal: los hijos del bajío' (Memories of Salt: the Children of the Shoals), presented by the local community on the Muellito Viejo beach.
The fishing haul in Corralejo, albeit on a smaller scale, resembles the more famous one in El Cotillo, which takes place in August for the Virgen del Buen Viaje festivities and also concludes with a collective roast.
Further south, in Las Playitas (municipality of Tuineje), the San Pedro festivities in June also included fish curing. Catches from the small boat fishing contest were collectively prepared by residents and left to dry on fishing baskets at the small pier.
