Despite not being born in Arucas, Marrero feels integrated into the local community, highlighting the support received during the arduous renovation process. She describes the venue as a space akin to her home, designed for customers to feel comfortable and enjoy a prolonged stay. The building, along with the adjacent quarry, is considered a historical heritage of the town.
The renovation, described by Marrero as one of the most challenging periods of her life, has been successfully completed thanks to her "resilience and fighting spirit," with the support of her partner, Elisa González. The restaurant's name, "Mariquilla Fandango," derives from a Canarian family expression that evokes Elsa Marrero's lively personality and the warmth of grandmothers' cooking.
The menu at Mariquilla Fandango pays homage to family recipes, utilizing local, zero-kilometer products to support regional production. Featured dishes include classics like fried potatoes with eggs, meatballs, and stew, alongside typical Canarian starters and local cheese platters. They also offer brunch options and a diverse selection of homemade pastries.
